RECIPES FROM THIS VIDEO:
GINGER-LEMONGRASS LIMEADE:
โโโโโโโโโโโโโ-
-a big piece of ginger, smashed
-2 stalk lemongrass, smashed
-3/4 cup (150g) sugar
-1 cup (250ml) water
Bring to a simmer and let it it simmer for 30mins.
Pur through a sieve and add:
-6 cups (1,5L) water
-1/2 cup (125ml) lime juice
Mix and serve over ice.
COCONUT PANNA COTTA:
โโโโโโโโโโโโโ
-1 can (400ml) coconut milk
-2 TBSP sugar
-1 TSP vanilla sugar
-1 TSP agar agar
Bring to a boil whilst stirring constantly and let it simmer for 3-5mins.
Fill in ramekins and refrigerate for 3-6h.
Serve with mango.
GARLIC TOFU:
โโโโโโโโโโโ
-400g tofu
-2 TBSP corn starch
-1 TBSP oil
-a pinch of salt
Tear the tofu in chunks and toss with the other ingredients.
Bake at 180C/360F for 25mins.
Sauce:
-7 cloves garlic, minced
-a thumbsize piece of ginger, minced
-4 TBSP soy sauce
-2 TBSP agave or maple syrup
-2 TBSP vinegar
Sautรฉ garlic and ginger.
Add the remaining ingredients and let it bubble until the tofu is ready.
Toss in the tofu and stir fry on medium heat for a few mins.
Serve with sriracha mayo.
GOCHUJANG EGGPLANT:
โโโโโโโโโโโโโ
-2 eggplants, cut in thick slices
-salt and curry powder to taste
-a drizzle of oil
Mix and bake at 180C/360F for 25mins
Glaze:
-1 1/2 Tbsp each Gochujang, vinegar, and agave
-3 Tbsp ketchup
Mix and brush the baked eggplant with it.
Pop it back in the oven for another 5-10mins.
Serve with crispy onions and cilantro.
HOMEMADE NOODLES:
โโโโโโโโโโโ
-4 cups (500g) flour
-a pinch of salt
-1 cup (240-250ml) water
Knead 5-7mins until itโs a smooth dough.
Rest 25mins.
Roll out the dough thinly and generously dust it with flour.
Fold it in two times and dust with enough flour that the layers donโt stick.
Cut into thick noodles and loosen them up.
Boil in water 2-3mins until the noodles float.
Sesame dressing:
-juice of 1 lime
-2 TBSP agave or maple syrup
-1 TBSP soy sauce
-2 TSP sriracha
-2 TBSP hot oil
Mix and stir in the noodles after cooking.
CUCUMBER SALAD:โโโโโโโโโโโ
-1 cucumber
Cut in half lengthwise and smash it, then cut in chunks.
Sauce:
-1 Tbsp tahini
-1/2 Tbsp soy sauce
-1/2 Tbsp maple syrup or agave
-1 Tsp vinegar
-optionally: 1 Tsp chili crisp or garlic powder
Mix the sauce and add in the cucumber.
