You cannot add more RAM at a later date because it can't be removed or replaced. This is the same with the SSD. However, you can use a combination of cloud storage and cheap external drives to quite effectively increase your total storage space if necessary. Note that on Macs with a 256GB SSD, you only have about 215GB of usable storage space after you take system files and the macOS operating system itself into consideration (they take up around 40GB). So base your decision on that number rather than the full 256GB on the Apple website.
