I haven’t forgotten about you guys! I’m feeling much better and I’m able to get cracking on prep for my Cookbook shoot. I’m filming a little Vlog today showing you all the things I’m doing to get ready, organizing the props, the kitchen, my garden, and of course my living room. I opted to shoot the Cookbook at my house because it felt so much more authentic to me than to rent out a studio and use all their props. I wanted to use the majority of things that I already have here but in order to make room for the photography crew and their equipment. (And the crazy heavy marble slabs we purchased a few few weeks ago. Check my shorts tab if you missed that one )I had to clear out my living room. George is standing by, wondering what is going on? I keep telling him he’s going to have to move too sooner or later ha ha ha! Stay tuned for an upload on Saturday with the Vlog! 😘💕

UPDATE: Let's file this under good "Life Lessons". Anytime you don't like the answer a doctor gives you, get a second AND third opinion! Then you can see if the answer stays the same or if there is consensus to a different opinion. I went and saw 2 more doctors after my hammock accident and they BOTH agreed, no surgery was needed! YES, I do have the degenerative disc disease in my neck, but that is unrelated to the pain I was experiencing, which upon further tests was due to a horribly pinched nerve. So, on another course of steroids and feeling SO much better! So now it's "operation cookbook prep" The shoot is next week and I'll be sharing some of the fun preparations! Sorry there wasn’t a new video today! But im still dealing with the pain of my little hammock accident as described in a my newsletter a few weeks back. (Not a subscriber? You can subscribe here:  https://entertainingwithbeth.substack.com/ ) basically i reclined on a hammock in our yard that had rusted out due to all the rain and it collapsed on me! Anyway turns out an MRI on my neck revealed a bigger problem (degenerative disc disease in my neck which apparently runs in my family!) which requires surgery 😫 so just taking it easy this month while i prepare for my cookbook shoot in May then doing the surgery afterwards so just taking a little break from YouTube this month but will be back with a BTS video of the cookbook shoot next month! Stay tuned! Ok going back to my ice packs! 😂💕 miss you guys! 😘

New feature I am experimenting with here on YouTube. They’ve asked me to participate in a beta that allows me to curate my favorite products in my store tab on my channel. I know a lot of you always ask me if you can find certain products in my Amazon store and it can be hard to navigate off YouTube and actually find the store. Amazon does not make this easy or searchable unfortunately. So I was excited to see that YouTube, is experimenting with curated shops like this! I’ve created three collections, you can check them out and let me know what you think. What other types of collections would you like to see I think we could really have fun with this!

This recipe uses basic ingredients, yet creates a simply delicious and elegant chicken dinner for two! Stuffed with gooey cheese, baby spinach, and sundried tomatoes, then topped with my simple pan sauce. Serve with my Foolproof Roasted Potatoes and dinner is ready!
