Ingredients for 18 medium-sized brioches:
For the dough:
-500 gr 0 flour (with 10 of proteins)
-180 gr milk
-100 gr sugar
-2 medium-sized eggs
-9 gr of fresh brewer's yeast (or 3 gr if it's dry)
-60 gr butter at room temperature
-5 gr salt
-1 teaspoon of vanilla extract
- organic lemon zest
For the custard cream:
-250 gr milk
-2 medium-sized egg yolks ( if you want your cream to be of a bright orange tone, use organic eggs!)
-60 gr sugar
-20 gr cornstarch
- organic lemon zest
-1 teaspoon of vanilla extract
For brushing the top of the dough:
-1 egg yolk
-2 tbsp of milk
For dusting:
-icing sugar (to taste)
