The iPhone's native camera app can not manually control exposure in terms of shutter speed, no pro mode, no manual mode, no intervalometer, timelapse produced in app without single frames.
Only some simple exposure compensation is available as well as touching the point where to focus and measure light.
But I found two apps from the iOS app store where we actually get lots of manual controls.
This short video shows that the iPhone camera actually is very good and capable with third party apps.
