You can find the detailed Pumpkin Pie Recipe in the description, many more can be found on my website. http://www.livingthehealthychoice.com/ A huge thank you to Jamie Oliver and his FoodTube team for letting me film in their kitchen and being so welcoming! null Pumpkin Pie Recipe (makes a Ø18cm pie) Crust 80g rolled oats 100g pecans 7 dates 1 tsp cinnamon 2 tbsp coconut milk (if it's too dry and loose) Filling 1 can pumpkin puree 2 tbsp coconut milk 4-5 tbsp maple syrup a pinch of sea salt 2 tbsp lemon juice 3 tbsp cornstarch 1 tsp cardamom 2 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp ground ginger 1/2 tsp ground cloves Preheat your oven to 175°C. Put all the crust ingredients in a bowl and blend them in a food processor. If the crust is too dry or loose, add some tbsp of coconut milk. Grease the cake tin with coconut oil or olive oil and spread the crust evenly out, using your hands. In a separate bowl mix all ingredients for the pumpkin filling and mix well. Spread it out on top of the crust and bake it in the oven for about 45-50 minutes. Take the pie out of the oven and let it cool down for about 3 hours. It'll taste great with coconut whipped cream!
