LEARN HOW TO MAKE A DELICIOUS VEGAN CHOPPED SALAD + A MATCHA LATTÉ! LAY HO MA!! This episode is a bit of a special one! As a small channel creator (and working at my other job!), it's sometimes a challenge to put together a simple but delicious meal when you're on the go. This is sometimes what I make to eat when I'm not filming recipes, but this by no means is what I eat all the time - in other words, I definitely have days when I crack open a jar of store bought pasta sauce, boil some pasta, and call it a day :) Ingredients: SALAD INGREDIENTS: 4 cups of mixed greens 1/4 cucumber 1/4 carrot 1 apple (fuji is my fav!) few slices of red onion 1/2 cup canned chickpeas 1 tbsp za'atar couple generous pinches of pink salt pepper couple tbsp lemon juice 1 tbsp dijon mustard 4 tbsp olive oil MATCHA LATTÉ INGREDIENTS 1 tsp matcha powder 1/4 cup hot water 1 tbsp maple syrup handful of ice cubes 1 1/2 cups of coconut or almond milk Directions: SALAD DIRECTIONS: 1. Roughly chop the mixed greens and place in a large mixing bowl 2. Dice the cucumber, carrot, apple, and red onion. Add them to the greens 3. Add the chickpeas 4. In a small mason jar, add the za'atar, pink salt, pepper, lemon juice, dijon mustard, and olive oil. Close the jar and give it a really good shake 5. Mix and plate the salad. Pour over a couple tbsp of dressing MATCHA LATTÉ DIRECTIONS: 1. Sift the matcha powder into the matcha bowl 2. Add the hot water and whisk using the matcha whisk until nice and frothy 3. Add the maple syrup to the serving cup 4. Pour in the matcha and give it a swirl to combine 5.
