Recipe from One World Vegetarian Cookbook
Harira - spicy bean soup (personal opinion: NOT at all spicy)
1 onion, chopped
1 can garbanzos/chickpeas
1 can white kidney or borlotti beans
1 can tomatoes
1/2 tsp saffron threads
1/2 tsp cinnamon
1/4 green chili, seeded and chopped or 1/4 tsp chili powder
2 tbsp cilantro, chopped
2 tbsp parsley, chopped
juice of one lemon
2 quarts stock
1/2 cup rice
1 tbsp flour
oil
salt and pepper
Directions:
Saute onions, add beans and spices, stir well and cook for 5 minutes.
Add stock and rice. Boil for 10-15 minutes, then mix the flour with a little water to make a roux, stir into soup. Adjust seasons if needed. Cook another 15 minutes. Serve with cilantro on top.
