Fry the onions with a bit of oil in a pan on medium heat for about 2-3 minutes, stirring occasionally. Then add another bit of oil and add garlic, keep frying for 20-30 seconds. Add tomato sauce with a splash of water and season with salt and black pepper. Crack in the 3 eggs, then close the lid and let it simmer for 2-3 minutes.
