Ida calls her pasta 'maccaruni cui feri' while in Italian it's maccheroni, but however you want to call them, these hand rolled macaroni shapes are fun to make, and are delicious served with freshly foraged porcini mushrooms. You can of course use ordinary mushrooms. This dish is vegan up to the point you add optional cheese at the end. Here are the ingredients:
for the pasta: 200g 00 flour, 200g semola rimacinata, 200ml of water.
for the sauce: 500g diced mushrooms, 1 garlic clove, 500g bottled, tinned or fresh tomatoes, handful basil leaves, salt, extra virgin olive oil
